Katy's Smokehouse Smoked Albacore

We were given a recommendation to check out Katy's Smokehouse in Trinidad and since we happened to be driving by it one day we dropped in. I was expecting a restaurant, but Katy’s is really just a counter inside a small building. We highly recommend you buy the smoke albacore and make these two delicious recipes. Katy's Smokehouse sells smoked salmon, albacore, and other fish along with canned seafood goods. We were in and out after selecting a small piece of smoked albacore for $39/lb (Jeri is not a huge fan of salmon although I do like it) and the frozen Mo’s clam chowder base with bacon ($10). You just add warmed milk to the clam chowder and it makes three servings.

We haven’t had the chowder yet, but we were super hungry when we got back home so after doing a little googling for recipes we started off with Smoked Albacore on Sourdough. We toasted a few slices of sourdough with butter in a pan, added a little mayo, then the tuna and sprinkled it with lemon pepper. This held us over while we prepared dinner.

Smoked Albacore Cucumber Avocado Salad

We used half of the the smoked albacore and made two servings. This meal turned out absolutely delicious!

  1. Dice up a half an English cucumber, split for each serving

  2. Split and dice up an avocado, half for each serving

  3. 1/3 cup of lemon vinaigrette dressing

  4. 1/4 cup cooked of quinoa (use chicken stock instead of water for more flavor! We like the Better than Bullion reduced sodium organic chicken flavor from Costco)

  5. Couple tablespoons of muffaletta mix

  6. Plenty of fresh ground pepper

  7. A couple ounces each of the smoked albacore chopped up

  8. Mix it all together and enjoy!

Smoked Albacore Quinoa

The next day we were going on a long seven mile hike so we brought our lunch in addition to the usual snacks. We used the rest of the albacore and did a slight variation on the above to make the following which is hearty and healthy:

  1. Diced up another half an English cucumber

  2. Two cups of cooked quinoa in chicken broth

  3. 1/4 cup of salad topper we got from Costco which is a mix of sunflower and pumpkin seeds with cranberries. Adds a little crunch and tartness.

  4. The rest of homemade Italian dressing we had made a few days before. We like to use MCT oil, red wine vinegar, and this Italian seasoning mix that we make in large quantities and grab a few tablespoons of when we want to make fresh dressing (better than store bought!)

  5. I would definitely recommend avocado again, but we did not have any!

  6. Dice up the remaining few ounces of the albacore and mix it all together

We loved both of these so much we were going back to get some more smoked albacore from Katy’s before we left Trinidad, but unfortunately by the time we got there on our last day, they had already closed (they close at 4:30 pm).
